SANS 10330:2020 Requirements for a Hazard Analysis and Critical Control Points (HACCP) System

Hazard Analysis and Critical Control Point (HACCP) is the South African National Standard adopted to assist a organisations that manufacture, distribute, and transport food. This Standard is a subset of the ISO and FSSC 22000:2018 Standard that provides the requirements for a Food Safety Management System. HACCP is the Standard that focuses on the pre-requisite controls of the ingredients and processes (inputs and outputs) of food, considering controls that are verified through a Risk Assessment.

There are 7 HACCP principles/ process steps which identify and control specific food safety hazards that could affect the safety of food, the process is as follows:

  • Conduct a hazard analysis.
  • Determine the critical control points (CCPs).
  • Establish critical limits to ensure that each CCP is under control.
  • Establish a monitoring system to ensure control over each CCP by scheduled testing or observation.
  • Establish the corrective action to be taken when monitoring indicates that a particular CCP is moving out of control.
  • Establish validation and verification procedures and conduct a review to confirm that the HACCP system is working effectively.
  • Establish documentation on the procedures and records appropriate to these seven principles and their application.
